I whipped up some home-made beef enchilada’s with home-made guacamole, mango salsa and spanish rice.

Excellent dish, just by mentioning gave me chills. Alternatively you could pair it with a Cabernet Sauvignon – Merlot 2006 by the Mexican winery Monte Xanic, which goes nicely with spicy dishes.
I've had the Cab from Monte Xanic when I was in Cancun several years ago – it did have a sort of spicy component going on – was good stuff.
